Barley and beef soup

Serves: 4 – Preparation: 10 minutes – Cooking: 65 minutes

Ingredients

454g (1lb) beef stew, cut into cubes

1 onion, chopped

60 ml (4 tablespoons) of olive oil

2 cloves of garlic, grind

250 ml (1 cup) diced carrots

500 ml (2 cups) mushrooms, diced

15 ml (1 tablespoon) tomato paste

250 ml (1 cup) light beer

125 ml (1/2 cup) peeled barley

1.5 L (6 cups) beef broth

15 ml (1 tablespoon) of maple syrup

15 ml (1 tbsp.) mixture of Provencal herbs

15 ml (1 tablespoon) mild smoked paprika

30 ml (2 tbsp) butter

125 ml (1/2 cup) diced cheddar cheese

Salt and pepper to taste

Preparation

STEP 1

In a large pot, fry the meat and onion in oil for 2-3 minutes.

2 STEP

Add garlic, carrots, mushrooms, tomato paste and simmer for another 2 minutes.

STEP 3

Deglaze with beer.

STEP 4

Add the barley, broth, syrup, herbs de Provence, paprika, cover and cook for 1 hour over medium-low heat, stirring occasionally.

STEP 5

Stir in the butter. Check the seasonings.

STEP 6

Serve with cubes of cheese.
