After the festivities and the big cooking of fancy meals to celebrate the end of the year, maybe it’s time to go back to simpler and sometimes healthier dishes to find the line. Leek soup
Ingredients :
- 4 large leeks
- 6 potatoes
- 2 onions
- 100 grams of butter
- 2 liters of water
- Salt
- pepper
First of all, you need to wash the leek well. Then remove the first leaves and cut them into thick slices. Then you will need to peel, wash and cut the potatoes into 8 pieces. After that, clean and chop the onion. At this stage of cooking, pour the water, leeks, potatoes and onions into the pot. Then salt and pepper. Put on a slow fire and cook, covered, for 30 minutes. Finally, mix everything. All you have to do is add a dollop of butter to each plate before serving.
tomato soup
Ingredients:
- Three diced tomatoes
- Red pepper
- A clove of garlic
- A small tomato
- Hard-boiled egg
- Gherkin
- Celery stalk
- Two tablespoons of olive oil
- 125 ml of water
- A teaspoon of sugar
- A pinch of salt and pepper
- A little basil
Here are our tips for making this soup: First, peel the garlic clove. Then mix the following ingredients: diced tomatoes, olive oil, sugar, garlic, water, salt and pepper. To breed it as much as possible, do not save on funds! Finally, if you’ve chosen a hot soup, all you have to do is heat it over low heat in a saucepan or simply in the microwave. For the more adventurous who would like to eat it cold, leave the preparation for a few hours in the refrigerator.
To invite children to discover this soup, we offer you a very simple decoration idea: first pour the soup into a bowl. Use the red pepper to make a mouth by cutting off a large slice. Then cut two strips to create the eyebrows. Then layer a slice of tomato, a hard-boiled egg and a slice of pickle to make the eyes. Finally, bend the stem of the onion to make a bundle of hair. January pumpkin, carrot and potato soup
Ingredients :
- 1.5 kg of pumpkin
- 2 carrots
- 2 potatoes
- Onion
- A clove of garlic
- 30 grams of butter
- A cube of vegetable broth
- A little nutmeg
- A little water
- A little fresh cream
- Parsley
- Salt and pepper
This recipe will take you 20 minutes to make. First of all, peel the onion and garlic and chop them. Next, work on the pumpkin, cutting the flesh into cubes. Peel the carrots and potatoes. Don’t forget to wash them. Cut them into slices.
After that, add three tablespoons of cream to your tender pieces of pumpkin. Then mix everything and heat over low heat. Cover the pan and let it cook. Then put the butter in a saucepan and sauté the pieces of pumpkin, onion and garlic. When they are well browned, pour about half a liter of water over them.
Onion soup
“Poor man’s soup” is a reliable choice for winter soups, very popular with families who sometimes eat it even outside of meals. Here are the ingredients you’ll need to make your recipe a success:
- Chop four large onions
- 3 slightly beaten egg yolks
- Peel and chop 2 cloves of garlic
- 30 grams of flour
- 50 grams of butter
- 5 centimeters of oil
- Salt
- pepper
- The bouquet is beautiful
- 10 ml of white wine
- 10 ml of Madeira
- 100 grams of grated cheese
- 1/2 baguette, sliced
Brown the onions in the butter and oil over medium heat to color them. Cook for a few seconds, adding a little flour. Then soak in white wine and let it darken. After that, add three quarters of a liter of water and salt and pepper. Discard the bouquet garni and garlic. Then it will be necessary to bring everything to a boil and cook over low heat for an hour. This will give you time to cut the bread into small slices and make toast from them by placing them in the oven.
Also mix the egg yolks and the Madeira. Don’t forget to take out the bouquet garni as soon as the soup is ready. Finally, add the egg yolks and mix well. You’ll only have some garnish left over by spreading out some croutons and adding Gruyere cheese to soup plates. The final touch: place the Marmite bowls in a preheated 210°C oven and bake for about 10 minutes. You can serve as soon as the top is well browned. Treat yourself!
