How to cook vegetable soup?

Vegetable soup is one of the most famous seasonal dishes of the French. Perfect for warming up, it can be personalized depending on the products you choose. Here’s a simple recipe to highlight these garden staples.

In summer, as in winter, soup is considered healthy and useful for the whole family. It’s also a way to make it easier for kids to eat their vegetables. On the other hand, with very low calories and a great feeling of satiety, this soup is considered excellent for health. It is also an ideal dish if you want to watch your figure.
Whichever recipe is chosen, the choice of ingredients is absolutely crucial, as the freshness of the food determines the success of your recipe. Contrary to popular belief, it is not recommended to use old products: it will deteriorate the taste and nutritional quality.
This dish can be served both as an appetizer and as a main dish, depending on the amount of vegetables used and the side dish chosen. As a starter, it can be raw, where you can add starch or protein to the main dish.

2 leeks
2 potatoes
2 carrots
1 turnip
1 onion
olive oil
salt and pepper

Start by washing all the vegetables. Rinsing them with clean water reduces the number of microorganisms and removes any traces of pesticides.
Then cut them into small pieces so that they are roughly the same size. Small pieces are perfect for preparing your future mixture. Make sure to cut off both ends of the leek well: the root and the top of the green leaves. For onions, you can finely chop them.

In a large pot, add a little olive oil to fry the onion, leek and turnip for 5-6 minutes over a low heat. Browning vegetables over low heat brings out their flavor. As for the seasoning, that’s up to you.

Add potatoes and carrots to a pot and cover with cold water. Start boiling again. Cook for 30 minutes, stirring the mixture regularly. Your potatoes and carrots should be very tender to save time when blending.

When all your vegetables are cooked, use a blender to turn them into a soup. Finally, you can add a little cream to thicken the soup if needed.

To enhance your recipe, add the ingredients of your choice a few minutes before cooking:
bay leaf
Chicken or bouillon cube
Fresh cream to smooth or refresh if too hot when served

If the soup may seem easy to eat, you can supplement it with other foods:

Cereal bread
grated cheese
Poached egg, soft-boiled, fried in a pan…
Pieces of meat: bacon or poultry
