Start by washing all the vegetables. Rinsing them with clean water reduces the number of microorganisms and removes any traces of pesticides.
Then cut them into small pieces so that they are roughly the same size. Small pieces are perfect for preparing your future mixture. Make sure to cut off both ends of the leek well: the root and the top of the green leaves. For onions, you can finely chop them.
In a large pot, add a little olive oil to fry the onion, leek and turnip for 5-6 minutes over a low heat. Browning vegetables over low heat brings out their flavor. As for the seasoning, that’s up to you.
Add potatoes and carrots to a pot and cover with cold water. Start boiling again. Cook for 30 minutes, stirring the mixture regularly. Your potatoes and carrots should be very tender to save time when blending.
When all your vegetables are cooked, use a blender to turn them into a soup. Finally, you can add a little cream to thicken the soup if needed.
