Indian red lentil soup recipe

For 4 people
- 1 large onion
- 2 cloves of garlic
- 1 teaspoon of turmeric powder
- 2 teaspoons of Madras curry
- 1 jar of 400 g of peeled tomatoes
- 250 g of coral lentils
- 2 carrots
- 1 turnip
- Fresh coriander
- Olive oil
- 10 ml of coconut milk
Preparation of soup
In a pot, fry chopped onion and chopped garlic in hot olive oil. Add turmeric and curry powder and mix. Then put peeled tomatoes, diced carrots and turnips, coral lentils and add 30 ml of boiling water, salt.
Simmer for 25 minutes to infuse the coconut milk. Cover and simmer for another 10 minutes: the lentils should be cooked, feel free to taste them!
Sprinkle with fresh cilantro before serving. Have a nice lunch!
