When it’s cold outside and there’s little light, we pamper ourselves with nice dishes. And in this regard, there is nothing better than a smoky soup. Colorful with carrots, nutritious with lentils and seasoned with cumin, this soup is just perfect.

– 1 tbsp butter
– 1 onion, chopped
– 2 cloves of garlic, grind
– 1 cup of dried green lentils
– 4 cups of beef or chicken broth
– 1 C. ground cumin
– 3 cups of carrots, cut into cubes
– 2 glasses of milk
– 4 cups of fresh spinach, chopped
– Salt and freshly ground pepper to taste
– Toast to taste
– Parsley or cilantro – to taste
Heat the butter in a saucepan over medium heat and fry the onion and garlic for 2 minutes. Add the lentils and continue to cook for 2 minutes. Add stock and cumin and season to taste. Bring to a boil, then simmer for 20 minutes.
Add the carrots and simmer for 15 to 20 minutes or until the carrots and lentils are tender. Add the milk and spinach and simmer for 2 minutes. If desired, decorate the bowls with croutons and green parsley or cilantro. To serve.
