Ingredients

1 tbsp butter
– 1 onion, chopped
– 2 cloves of garlic, grind
– 1 cup of dried green lentils
– 4 cups of beef or chicken broth
– 1 C. ground cumin
– 3 cups of carrots, cut into cubes
– 2 glasses of milk
– 4 cups of fresh spinach, chopped
– Salt and freshly ground pepper to taste
– Toast to taste
– Parsley or cilantro – to taste

Preparation

STEP 1

Heat the butter in a saucepan over medium heat and fry the onion and garlic for 2 minutes. Add the lentils and continue to cook for 2 minutes. Add stock and cumin and season to taste. Bring to a boil, then simmer for 20 minutes.

2 STEP

Add the carrots and simmer for 15 to 20 minutes or until the carrots and lentils are tender. Add the milk and spinach and simmer for 2 minutes. If desired, decorate the bowls with croutons and green parsley or cilantro. To serve.
