On the menu: kuku sabzi according to an Iranian recipe, which looks like a peculiar omelet made of grass. Kuku sabzi, from 4 to 6 people – from 10 to 13 personal points:
INGREDIENTS:
- 5 c. olive oil
- 1 bunch of flat parsley
- 1 bunch of cilantro
- 1 bunch of dill
- Mint yard
- 1.5 art. baking powder
- 1 teaspoon of fleur de sel
- 1/2 tsp. ground coffee from turmeric
- 4 turns of a pepper mill
- 1 S. flour
- 8 large eggs
- 50 g of feta or ricotta
- 1 pinch of harissa or 1 pinch of ground chili pepper
- 100 g of walnuts
- 100 g dried cranberries (best in Iranian grocery stores: barberry)
Coral lentil soup, for 4 people – from 15 to 18 personal points:
INGREDIENTS:
- 1 onion
- 2 cloves of garlic
- A 1.5 cm piece of ginger
- 2 tablespoons olive oil (or coconut oil)
- 1 pinch of chili flakes
- 3 pinches of curry powder
- 2 pinches of turmeric powder
- 150 g of coral lentils
- 400 ml of tomato pulp
- 400 ml of coconut milk
- A small handful of fresh cilantro (leaves and stems)
- Salt
- Ground pepper
Pea soup, Romanesque cabbage, for 4 people – from 2 to 4 points:
INGREDIENTS:
- 100 g of chopped peas
- 1/2 small Romanesco cabbage
- 2 cloves of garlic
- 1 small onion
- 1 S. c. cumin powder
- Juice of half an orange
- 3 tbsp. at olive oil
- 100 cl of water
- Salt, pepper
