Rich in vitamins and fiber, as well as low in calories, they are often recommended by nutritionists during diets to cleanse our bodies of toxins and (re)give us crazy energy! 1. Energy soup: vegetable soup that allows you to lose weight
Ingredients for 4 people
- 1 liter of vegetable broth
- 5 carrots
- 2 stalks of celery
- 1 white leek
- 2 oranges
- 1 piece of ginger about 2 cm
- 15 g of turmeric powder
- 15 g of almonds
- Olive oil
- Salt and pepper

Preparation
- Peel the carrot and cut it into pieces. Wash the white leeks and celery stalks. Remove the roots from the white leek. Chop it finely. Cut celery stalks into pieces. Peel the oranges, then finely chop them. Peel and finely chop a piece of ginger.
- Fry white leeks, carrot and celery pieces, ginger and turmeric in a saucepan, drizzled with olive oil. Add the orange slices. Salt and pepper to your taste. Wet with vegetable broth.
- Cook for 45 minutes on medium heat, almost covered. Add the almonds.
- Mix the preparation until the desired texture is obtained. If the soup seems too runny, feel free to cook it for a few more minutes on medium heat, uncovered, to thin it out a bit. Conversely, if it seems too thick, add a little water.
2. Red cabbage soup with vinegar: eat in the evening for weight loss
Ingredients for 4 people
- 75 ml of chicken broth
- 400 g of red cabbage (pre-cut)
- 1 medium-sized potato
- 25 ml of vinegar
- 2 shallots
- Olive oil
- Salt and pepper

Preparation
- Peel and cut the potatoes in pieces. Peel the shallot, then finely chop it.
- Sauté the shallots in a pan with a drizzle of olive oil. Add the red cabbage. Deglaze with cider vinegar and fry for a few minutes. Add potato pieces. Salt and pepper to your taste. Pour chicken broth.
- Ready cook for 45 minutes on medium heat and almost covered (simply shifting the pot lid to leave a very small opening). Blend until desired texture is achieved. This soup must be eaten quickly because the cabbage can ferment after a few days.
3. Mom’s soup: with spinach, leek and celery, ingredients that help lose weight
Ingredients for 4 people
- 1 liter of almond milk
- 1 zucchini
- 2 tomatoes
- 50 g of spinach
- ½ red bell pepper
- 1 white leek
- 1 celery stalk (with leaves)
- 2 cloves of garlic
- 1 bouquet garni (thyme, bay leaf, rosemary)
- 1 cube of chicken broth
- Olive oil
- Salt and pepper

Preparation
- Wash all vegetables with water. Remove the roots from the white leek and finely chop it. Cut the stalk of celery into pieces, and coarsely chop the leaves. Zucchini cut into pieces. Remove the stalks from the tomatoes and peppers. Remove the seeds and cut them into medium-sized pieces. Peel the garlic cloves, remove the seed and crush.
- Ready brown the leeks and garlic in the casserole with a drizzle of olive oil. Add the celery, zucchini, tomatoes, bell pepper, spinach and a bouquet garni. Salt and pepper to your taste. Drizzle with almond milk. Add the chicken stock cube.
- Cook for 45 minutes on medium heat, almost covered.
- Take the bouquet out of the bowl and mix the preparation until the desired texture is obtained.
