Mixed salad, fries, lentils and cauliflower

For 4 people:

  • 300 g of cauliflower florets
  • 1 tablespoon of sherry vinegar
  • 3 tablespoons of olive oil

Wash the lentils, pour them into a pot, fill with water 3 times the volume and cook for about 20 minutes. Drain them. Wash the cauliflower florets and steam them for 10 minutes. Wash and twist the salad. In a small frying pan without fat, quickly fry the bacon. Prepare the dressing. To do this, pour the vinegar into a bowl and mix with salt and pepper, then whisk in the olive oil. Place the frisées, lentils, cauliflower florets and bacon on a large platter, drizzle with a little of the vinaigrette and serve the rest of the dressing on the side. Have a nice lunch!

Lentil, bacon and thyme soup

For 6 people:

  • 250 g of green lentils
  • 1 can of peeled tomatoes
  • 150 ml of olive oil
  • 2 teaspoons of thyme

Put the lentils in a pot, cover with water and bring to a boil. Boil for 3 minutes, then drain. Peel and chop the onion. Dice the bacon and mince the garlic cloves. Wash, clean and cut the carrots into rings, then cut the celery into slices. Heat a little olive oil in a saucepan or deep pot and fry the onion, bacon and garlic for 5 minutes. Add the remaining olive oil with the carrots, celery stick, tomatoes, thyme, lentils and water. Season to your taste. Cover and cook for about 35 minutes, the lentils should be tender. For 3 people:

  • 1 small can of coconut milk
  • 200 g of coral lentils
  • 3 small cloves of garlic
  • 2 teaspoons of curry
  • 1 teaspoon of ginger powder

Boil the lentils in a pot in an appropriate amount of cold (unsalted) water until tender (10-15 minutes). Meanwhile, finely chop the onion and fry it in clarified or olive oil. Half cooked, add the diced tomato and finely chopped garlic, and your choice of vegetables, cut into small pieces. Then add the spices. Mix everything, then pour coconut milk, adding a little water if necessary (it should not boil!). Add the lentils and simmer for a few more minutes, changing the flavor. Have a nice lunch!

For 4 people:

  • 1 large can of peeled tomatoes

Chop the onion and leek. Grate the carrots. Sweat everything in a pre-greased cast iron casserole. (7-8 minutes). Add tomatoes, spices, white wine, salt and pepper and simmer for 3/4 hour. At the same time, boil the lentils to 90% (as indicated on the package). When the lentils are almost cooked, drain them and put them in the tomato sauce. If necessary, add a little water (it should be the consistency of meat Bolognese). Let it boil for another 5-10 minutes. Enjoy your spaghetti. Done!
